Slow start or early one, totally your call. the Ming city wall by bicycle is roughly the heart of today, and we leave plenty of breathing room so nothing feels rushed. Food-wise, hold out for roujiamo — worth it.

We’ll point you at the Mogao Grottoes Buddhist murals — and since it’s all yours, you linger where it grabs you and wander off when you’re ready. Somewhere in there, Dunhuang donkey-meat noodles, the kind locals actually line up for, not the tourist version.
